- Refrigerar de 10 a 20 minutos dependiendo del calor
- Volver a estirar la masa a lo largo
- Doblar en forma de tríptico y de igual manera el dorso a la izquierda y doblez a la derecha

- Volver a estirar la masa con el rodillo a lo largo
- Doblar de la misma forma que que los pasos del 13 al 15
