- Movemos constantemente hasta tener 60% tomate y 40% jugo y posterior a eso se licúa
- En la misma olla colocamos 15 ml de aceite para sofreír la cebolla y el ajo hasta caramelizar
- Posteriormente agregamos el tomate licuado y revolvemos de 3 a 4 min
- Después se agregamos 300 ml de agua y 150 ml de puré de tomate. (el puré de tomate es para profundizar el color de la salsa)
- Condimentar al gusto con albahaca, sal, pimienta y orégano
- Tapamos y dejamos reducir por 30 min, a fuego medio
- Cuando el tomate este abajo y el agua arriba movemos y tapamos constantemente
- Ya que llegue al punto de reducción deseado, colocamos nuestra salsa en un recipiente
- La consistencia depende de que elabores, si es pizza es más espesa, pero si es pasta es más ligera
- La pasta se coloca en un recipiente con una taza de agua, 1 cucharada de aceite y sal al gusto
- Se deja por 10 mina fuego medio, cuando esté lista se apaga, se deja enfriar y listo
