- 1 cta aceite
- 1/4 cebolla
- 1 diente ajo

- queso gouda o manchego suficiente
- chipotle adobado (opcional)

- Se pone a cocer una pechuga de pollo en agua con 2 cucharaditas de consomé en polvo. En una ollita se ponen unos 2 o 3 jitomates a hervir haciéndoles un corte en cruz en la piel para poderlos pelar. En una ollita se pone 1 cucharadita de aceite y se agrega 1/4 de cebolla picada y 1 diente de ajo picado. Cuando la cebolla esté transparente se agrega el jitomate molido o picado, se sazona con sal y pimienta (o con consomé) en este punto se le puede añadir chipotle adobado picado.
- Cocida la pechuga se deshebra grueso y se pone en un refractario, se cubre con la salsa y encima se le pone queso rallado*. Ya para comer se le da un golpe de horno para que el queso gratine. Se sirve con tortillas. Se puede acompañar con frijoles refritos.**
