- Preparamos los ingredientes para la crema de limón que es lo primero que se tiene que hacer.
En un coludo y a fuego directo ponemos la mantequilla, le agregamos el jugo de limón y el azúcar, ponemos a fuego alto y dejamos hervir para agregar la ralladura de limón. - Batimos las yemas y les vamos agregando el azúcar en forma de lluvia. Batimos hasta tener la consistencia a punto de listón.
- Ya que esta hirviendo la mezcla de la mantequilla, procedemos a temperar las yemas, agregándole un poco de la mezcla caliente hasta que estén casi a la misma temperatura ambas mezclas.
De ahí vertemos las yemas en el coludo y bajamos la flama. - Revolvemos las mezclas y dejamos cocinar hasta que se espese.
Retiramos del fuego y reservamos. - Preparamos los ingredientes para el bizcocho, comenzamos batiendo las yemas, y le incorporamos el azúcar en forma de lluvia.
- Batimos bien hasta conformar un merengue francés. Reservamos
- Batimos las yemas y le agregamos el azúcar glass de poco en poco, agregamos la esencia de vainilla y dejamos batir hasta obtener punto listón.
- Agregamos la cantidad 1 de harina e incorporaramos muy bien.
- Ya que tenemos el merengue francés, y la mezcla de las yemas, procedemos a mezclar todo.
Vamos a ir intercalando la mezcla de las yemas y los polvos previamente cernidos (harina 2 y sal) y mezclamos de forma envolvente hasta incorporar todo. - Ya que tenemos la mezcla, la pasamos a nuestra charola previamente preparada, con papel estrella y con ayuda de una espátula expandimos alrededor de la charola.
Horneamos a 180° durante 12 min aproximadamente. - Una vez que estuvo nuestro bizcocho, retiramos del horno, desmoldamos en un trapo húmedo, cuadramos con un cuchillo de sierray le agregamos la crema, expandiendo por todo el pan.
