  2. Llevar a ebullición la leche con el azúcar, la cáscara de limón y la vainilla de vaina. Retirar del fuego, la cáscara y enfriar.
  3. Derretir la mantequilla en una olla, agregar la harina cernida y tostar hasta que adquiera un tono amarillento.
  4. Verter poco a poco la leche templada sin dejar de revolver.
  5. Mantener en ebullición a fuego bajo durante 5 minutos hasta que se forme una crema espesa. Retirar del fuego y agregar las yemas.
  6. Pasar la crema a un molde plano previamente engrasado y tapado con plástico adherente. Refrigerar al menos 3 hrs. Hasta que adquiera consistencia.
  7. Cortar la masa en cuadros o en rectángulos.
  8. Batir los huevos y rebozar la masa primero en huevo y después en pan molido. Freír por porciones en el aceite hasta dorar.
  9. Escurrir un poco en papel absorbente y revolcar en azúcar y canela.
  10. Servir y decorar al gusto.
