  18. 30 gr azúcar glass

Instructions to make to make Tiramisú

  1. Para las soletas:
    Batir la claras con la mitad del azúcar refinada hasta llegar al punto turrón
  2. Batir las yemas con la otra mitad del azúcar refinada hasta blanquear, debe verse con burbujas en la superficie
  3. Colocar la harina en forma de lluvia en las yemas alternando con las claras, es importante que sea de esta forma sino las yemas se convertirán en una pasta inservible
  4. Colocar la mezcla en una manga con duya lisa o sin ella y colocar tiras sobre papel estrella, cernir azúcar glass sobre las soletas, hornear por 10- 15 min a 180°C o hasta que estén ligeramente doradas
  5. Para el jarabe de café:
    Hervir el agua con el azúcar aproximadamente 10 minutos hasta tener un jarabe simple, sacar del fuego, enfriar un poco, incorporar un poco de agua al café soluble diluirlo y agregar al gusto al jarabe
  6. Para la crema de queso crema:
    Hidratar la grenetina con el agua tibia y acremar el queso crema
  7. Montar la crema batida con un poco de azúcar glass si se desea, no afectará el sabor (hacer un baño María invertido) tener un traste con hielo y encima el traste con la crema batida bien fría y batir a velocidad rápida por unos 7 min)
  8. Hacer una pâte a bombe con las yemas y el azúcar (colocar el agua y el azúcar hasta hervir hasta que llegue a una temperatura de 120°C, batir las yemas hasta blanquear y agregar el jarabe a las yemas poco a poco para que no se separe la mezcla)
  9. Derretir la grenetina a baño María o en el microondas e incorporar en forma de hilo a la mezcla de yemas y después agregarlo al queso previamente acremado después agregarle la crema batida y por último poner un poco del jarabe de café al gusto
  10. Tomar las soletas y remojar con suficiente jarabe y ponerlas a los lados del molde
    Poner la crema y una capa de galletas y agregar otra capa de crema y alisar, refrigerar una vez que esté gelificada la crema
  11. Al momento de presentar, retirar el aro y si se desea, atar un listón y hacer un moño, espolvorear con cocoa encima o decorar a su gusto
