  1. Comenzamos alistando la mise en place
  2. Separa las yemas y claras.
    Haz un merengue suizo con las claras
  3. Prepara un baño maría, añade el azúcar a las claras y lleva a baño maría hasta que no se sientan los granos de azúcar.
  4. Bate hasta formar picos y reserva.
  5. Ahora comienza a acremar la mantequilla con el azúcar, hasta que esponje y torne a blanco.
  6. Derrite el chocolate y agregala sobre la mantequilla en forma de hilo.
  7. Añade las yemas uno por uno.
  8. Ahora agrega los secos intercalando con el merengue de forma envolvente.
  9. Vacía en un molde previamente con papel encerado o enharinado.
    Hornea por 45 min a 180°C.
    Después solo deja enfriar y córtalo en 3 capas.
  10. Para el jarabe de café.
    Lleva a punto de ebullición la leche, junto con el azúcar.
    Cuando esté a punto de hervir apaga y disuelve el café.
  11. Comienza hacer la butter cream y tiñela a tu gusto.
  12. Es importante que el mousse de fresa lo tengas un día antes o por lo menos 3 horas antes. Para este bizcocho corta en 2 capas el moousse, con un cuchillo mojado.
  13. En lo que se enfría el bizcocho y el jarabe puedes hacer la decoración y algunas figuras de fondant.
  14. Ahora si a armar el pastel!
  15. En el mismo molde donde horneaste coloca una bolsa y luego coloca una capa de bizcocho.
  16. Hidrata con el jarabe de café, coloca una ligera capa de butter cream, para luego colocar el mousse.
  17. De nuevo coloca una capa de butter cream y luego otro de bizcocho y así hasta terminar.
  18. Ahora cubre el pastel con la butter cream.
  19. Ahora solo añade la decoración, yo corté en tiras la hoja de azúcar y las pegue sobre el pastel, y encima coloqué una bolitas de las mismas. También coloque figuras de fondant y cake pops.
  20. Disfruta de una deliciosa rebanada!!
