- Para el almíbar tener todos los ingredientes listos
- En una olla poner el azúcar hasta obtener caramelo, agregarle agua dejar que hierva hasta que se deshaga el caramelo y reservar
- Relleno de ciruela
- Remojar las ciruelas por dos horas
- En una olla poner las ciruelas con su jugo a cocer, agregar el azúcar y dejar hasta que tenga una consistencia cremosa y reservar
- Relleno de fresa
- Cortas en trozos las fresas, en una olla poner el azúcar, verter el jugo de naranja y las fresas dejar que se consuma el jugo hasta que tenga una consistencia pastosa y reservar
- Relleno de coco rallado con cajeta
- En una olla mezclar la cajeta con la harina después agregar las yemas, coco y la crema para batir dejar que enfríe unos segundos, agregar la vainilla y reservar
- Pasta para flores
- Calentar 1 minuto la glucosa con agua
- En un recipiente mezclar el CMC, azúcar glass y la fécula de maíz
- Verter la glucosa ya derretida y mezclar, amasar por unos minutos hasta que se integre y refrigerar por 24 horas para usarse
- Para armar el pastel cortar en horizontal cada bizcocho en tres partes iguales
- Para la primer capa hidratar con el almidón y untar el bizcocho de chocolate con el relleno de fresa y con la siguiente capa hidratar el bizcocho de vainilla, untar con el relleno de ciruela y así con los demás intercalar el bizcocho y los rellenos hasta terminar
- Cubrir con crema para batir y dejarla lisa
- Para forrar con el fondant amasar un poco con la ayuda de fécula de maíz para que no se pegue, ponerle colorante y extender con la ayuda de un rodillo hasta tener el grosor de 1 cm y forrar el pastel
- Decorar con fondant y pasta para flores realizando diferentes tipos de flores
